Tapioca Cream (Casava Cream/Manioka Cream)

1/2 cup quick cooking Tapioka
1/3 cup honey
1/4 teaspoon salt
2 eggs
4 cups milk, scalded
1 teaspoon vanilla extract

Combine tapioka, honey, salt and egg yolks in top of double boiler. Add milk and mix thoroughly. Cook until Tapioca is transparent, stirring often.
remove from the heat and fold into the stiffly beaten egg whites.
Add the Vanilla. This may be served either warm or cold
with cream.

Fish in Coconut Milk.

This dish is a very common islanders dish, it is very simple to follow and easy to prepare.

You will need:

1 medium snapper
1 dried coconut
a scraper
and a dish
1 cup water
ginger (2cm)
Juice of one lemon.

1. - fillet the snapper and cut into nice sizes
2. - scrape coconut and pour in one cup of water, sqeeze all the milk out of the coconut sheds and place in a bowl.
3. - heat pan and cook what ever spices you want (onion, garlic, ginger) with salt until tender.
4 - place fishinto pan and heat up for 3 minutes.
5 - pour in coconut milk and simmer for 10 - 15 minuts....


and Walah!!!! your dish is ready!!!!!

Coconut Milk

Coconut milk is the cream that is extracted from the grated nut inside a dried coconut, you must be able able to distinguish the juice and the cream, if you asked for coconut cream, for sure you will see somebody scrape a coconut for you, but if you were thirsty you could ask for coconut "water" or juice.

In the islands this a very common food, and is used in many ways, in asian cooking coconut is also used.

this recipe here I want to share with you this afternoon is called Creamed Curry Fish...stay tuned and I will tell you how to cook it fresh from the see and off the coconut palm.....mmmmmmm delicious!!! but before we do that why dont you go and cook some rice first ok?... :)
